The Sauvignon Blanc grapes for the Mosaique Calcaire come from several plots in Sancerre ranging between 5 and 52 years old. All grown in Kimmeridgian soils, which ensure deep implantation of the vines, which gives the richness, while the limestone subsoil and sediments provide the fine minerality. The grapes are handpicked, carefully sorted before long pneumatic pressing. The wine naturally ferments and matures on the lees in cement tanks (88%) and French oak barrels (12%) for about 6 months.Â
