A very unique rosé, cheerful and bright, with lively bubbles, Rosé Brut displays lush fruity aromas, where the fruits of the forest, red apple and balsamic notes shine. The Brut Rosé is made from 60% Monastrel, 20% Grenache and 20% Pinot Noir.Â
The grapes are harvested by hand and whole bunch pressed. Short skin maceration to extract the aromas and colour before pressing. Fermentation of the must is at low temperatures to preserve the freshest aromas in the wine. The base wines are bottled at the beginning of the year and the bottles are placed in the ageing cellar, where, at constant temperature and humidity, in the dark, they will rest for more than 18 months. Once the ageing time is over, they riddle the bottles and disgorge to remove the lees, add the Brut dosage and cork each bottle with the definitive cork.Â
