Unlike the Etna Bianco, the Santo Spirito is made of only Carricante. In 2007 they planted Carricante on the northern vineyards which historically was dedicated exclusively to great reds. But in 2014, the great quality of the grapes, combined with the vigorous age of the vines, has allowed Terre Nere to broaden the spectrum with the production of white Crus, an opportunity that came at a very favourable moment.Â
The Santo Spirito DOC is composed of Carricante from old and young vines, as finding excellent quality fruit from Carricante in an area of DOC mainly dominated by red is not easy.Â
The wines are fermented and aged in 10-hectolitre barrels. They are wines whose rare complexity and structure bloom wonderfully over time. A wine of great longevity which will reward your patience with a beauty of unusual nobility.Â
This wine has an exuberant nose, thanks to the huge amount of volcanic ash characteristic of the Contrada. The Santo Spirito is like a soprano, the freshness is more accentuated, as in the spring vivacity, floral and rich expression of its very fine nature.
