The grapes are harvested favouring fruit or flower day, trying to coincide with the rising moon. They carry out a direct pressing with a sixty percent extraction and cold racking two days later. Fermentation begins by sowing spontaneous pied de cuvee and ends without residual sugar. Ancestral natural pètillant, bottled at a density of 997, with a calculated pressure of approximately 4.4 atmospheres. Disgorging took place in February 2023. Production limited to 4,897 bottles and 272 magnums.
