Piquette is a low-alcohol wine made by adding a portion of Springwater after the pomace at the end of fermentation is pressed and left to macerate for 12-24 hours. After pressing again, the result is moved to stainless steel tanks for fermentation and bottled just before it ends, resulting in a light, aromatic, and slightly sparkling wine-based drink. The Aphros Evoé is made with a blend of 50% Loureiro, 45% Alvarelhão and 5% Vinhão.
