The grapes selected for this wine come from different sub-regions of Dao. Vine age ranges between 100 and 120 years. Many of these grapes come from monovarietal vineyards such as Encruzado, Malvasia Fina, Uva Cao, Rabo de Ovelha, Branda, Barcelo, Douradinha, among others.
Pre-selection of grapes in the vineyard is supplemented with further sorting at the winery. Grapes are sent by gravity to the pneumatic press where the juice is gently extracted after which it settles naturally for 48 hours. Fermentation occurs in French oak barrels, with a part undergoing malolactic fermentation in old cement vats. Limited production less than 3000 bottles are produced.
Fresh and mineral profile, complex. It has a floral and delicate character, notes of sea air, seaweed and white flowers. Tense and vibrant in the mouth, slightly unctuous, with a very present acidity. Very long finish, with light smoked and salty notes. It will benefit from bottle age or decanting.
