Impecavel is made from 100% Encruzado, the queen variety native to the Dao region. Vineyards are between 30 and 50 years old and are mainly located in the sub-region Terras de Senhorim.
Grapes were harvested manually, sorted and destemmed and gravity fed to thermoregulated stainless steel vats. Once the alcoholic fermentation is complete, it is racked and malolactic fermentation is carried out in stainless steel vats, where it is aged for 6 months before bottling.
Aromatically intense, with notes of yellow-fleshed fruit, such as peach and nectarine. Floral notes of jasmine. Firm and well-integrated acidity, very balanced and persistent refreshing finish.
This wine is for celebration, good food, good friends and the good life. Food suggestions: lightly spiced dishes, white meats and pasta, dishes with tubers (turnips, sweet potatoes, beets) and legumes (chickpeas, beans, peas).
