The vast majority of land in Mâcon is dominated by clay (alluvial deposit) and a good quantity of limestone.Viré-Clessé, the Northern Cru of Mâconnais region, that always expresses an elegant balance. “Rendez-s de Septembre” because this wine is the only Viré-Clessé blended directly at the press, in September. The union of several characteristics which offers a great complementarity, richness and finesse. 

Manual and very careful harvest (small berries of this vineyard are quite fragile). Long and careful pressing, using a pneumatic press without removing too much of the grapes. The alcoholic fermentation and malolactic conversion (100% completed) are spontaneous without any additions completely done into neutral French oak barrels about 80% more than 10 years old, 20% more recent, no new oak for about 10 months, no racking and no stirring. By keeping the wine quiet it is a way to express a better typicity.
