The Chateau-Chalon AOC only produces Vin Jaune, made from the Savagnin grape variety.
The average age of vines is 30 years, organic farming, grassing every other row and working the soil. Manual harvest, pressing of the whole harvest, fermentation in stainless steel vats then ageing for at least 6 years in oak barrels (228L) under a veil of yeasts (oxidative ageing, untopped barrels).
Serve at around 14 degrees Celsius with white meats (chicken) with cream and mushrooms, spicy dishes or the classic Comté.
These robust wines can be stored for 50 years, peaking at 10 years.
