The flagship red wine of Ca’n Verdura, Supernova Negre, is made from the red mantonegro grape, which is native to the Binissalem region of Mallorca. It is grown in call vermell soils, which are composed of limestone and red clays that are rich in iron, and it has small to medium-sized galets.
Natural fermentation with native yeasts takes place in temperature-controlled stainless steel tanks at around 21°C and large, used French foudres following hand harvesting in small boxes and manual sorting. Only a tiny quantity of sulfites is introduced after the malolactic fermentation is complete. The wine is matured for eight months in the same French oak barrels (500l), as well as French foudres (2000l, 3000l, and 5000l). No fining agents are used.
Supernova Negre is a medium-bodied, aromatic, Mediterranean red that has hints of citrus, fresh herbs, exotic spices, and wild red berries.
