The flagship red wine of Ca’n Verdura, Supernova Negre, is made from the red mantonegro grape, which is native to the Binissalem region of Mallorca. It is grown in cal vermell soils, which are composed of limestone and red clays that are rich in iron, and it has small to medium-sized galets. Because of its location and cal vermell soil type, the best plots of old-vine mantonegro from goblet-trained vineyards planted in the 1950s in the nearby villages of Binissalem, including the village of Santa Maria del Camí, are the source of Supernova Red.
Supernova Negre is a medium-bodied, aromatic, Mediterranean red that has hints of citrus, fresh herbs, exotic spices, and wild red berries.
Vinification: Depending on the parcel or vineyard, alcoholic fermentation with native yeasts takes place in temperature-controlled stainless steel tanks at 21–22°C and huge, used French foudres following hand harvesting in small boxes and manual sorting. The maceration period varies from seven to fourteen days. The wine is allowed to rest in 2000L, 3000L, and 5000L French foudres as well as 500L used French barrels after the grapes have been gently pressed. Only a tiny quantity of sulfites is introduced after the malolactic fermentation is complete; none are added during the alcoholic fermentation. Following that, the wine is matured for an additional eight months in the same French oak barrels (500L), as well as French foudres (2000L, 3000L, and 5000L). Unfined and bottled.
