The native moll grape, which is grown in the cal vermell soils—which are composed of red, iron-rich clay and limestone with small to medium-sized galets—makes Supernova Blanc, the region’s best white wine. The greatest old-vine moll plots from bush-trained vines planted in the 1950s in the villages surrounding Binissalem, notably the village of Santa Maria, are the source of the flagship Supernova Blanc. These vineyards are regarded as the best in the region. The 130-meter-high Cas Pastor, Cas Verd, Son Borrás, and Plà de Buc plots are where the grapes are grown. Citrus, chamomile, fresh herbs, fennel, and white fruit notes give this medium-bodied, complex island white a terrific sense of freshness. At bottling, wines are produced with little interference and little sulphur. Since every bottle at this garage winery is sold every vintage, production must be extremely limited.
Vinification: The must is kept at cool temperatures for four days to allow the gross lees to spontaneously separate after it has been manually harvested in little boxes. The remaining 20% is then fermented in stainless steel tanks and the last 20% in 500L French oak barrels. The wine is clarified with bentonite clay before being bottled following five months of ageing on the lees and three months of stirring in barrels.
