After destemming, the crushed must undergoes a short maceration before fermenting spontaneously with wild yeasts. Sourced from French Pinot Noir clones with naturally small berries, the wine gains notable structure and density.
Aged for 12 months in used French barriques, the wine develops depth and subtle complexity without overt oak influence. It is bottled unfined and unfiltered to preserve its purity and character.
