Homogenous Limestone Clay soils opening out on the Etang de Thau and the Mediterranean sea. Plot selection in the vines and sorting at the winery. Grapes are harvested at night to keep freshness and aromas. Cold pre-fermentation maceration, fermentation at low temperature and wines are held in temperature controlled stainless steel vats. Filtration prior to bottling. 

Generous nose expressing white fruit and citrus notes. Balance dominates a fine liveliness, it reveals delicate lemony notes and a slight touch of bitterness typical of the grape variety. 

Matches perfectly with shellfish, seafood or grilled fish.
