Le Calabrun is a blend of 65% Grenache, 25% Syrah, and 10% Mourvedre. The vines are grown in two distinctive soil types, the first one is broken limestone with red clay in the west where the 60 year old bush vine Grenache and trellised Syrah grow. The second one is Jurassic limestone, as high as 600 metres above sea level on the Dentelles de Montmirail, with trellised Grenache.
Manually harvested grapes are typically de-stemmed. Fermentation lasts for three to five weeks with soft extractions and regular work on the lees. After a pneumatic press, there is the blending of free run wine and press wine. Followed by 18 months of maturing for a small part in an oak barrel and the other part is traditionally matured in a tank.
The wine has a dark red colour with ripe red berries, fragrant notes of black cherries, dried herbs, and a subtle touch of lavender. The bouquet is layered and nuanced. Dark cherries on the palate, a medley of savoury spices, such as thyme, rosemary, and a hint of black pepper. The integration of oak is seamless, contributing subtle notes of vanilla and cedar without overshadowing the vibrant fruit.
