The grapes come from Rheingau vineyards with shallow to deep, stony clay soils with layers of quartzite and slate.
The wine is matured in stainless steel tanks. It has a light, accessible body and a pleasant scent of citrus and apple. The crispy acid structure is balanced with great juiciness. The name “Sauvage” describes the lively, fresh character.
The 2024 vintage was characterized by unusually wet and warm weather. Spring began mildly, but a drop in temperature in April slowed vine development. The summer was changeable, with frequent rains and fluctuating temperatures. Despite some dry spells, precipitation remained above average. A rapid harvest began in mid-September, also intense because of much necessary selection. The cellar yielded a vintage with cool, elegant, and vibrant wines.
Serves well with marinated salmon, smoked fish pies, grilled chicken and fresh cheese.
