Fontana Celadon Sauvignon Blanc Verdejo

Produced exclusively from selected parcels in the 420 ha Dominio de Fontana estate in Uclés (Castile, Spain). The high-altitude vineyards are sustainably farmed, with no use of pesticides and minimal treatments. Each variety is carefully adapted to the different soils and growing conditions of the estate and each vineyard is managed independently to achieve perfectly balanced vines, capable of expressing both the character of the variety and of the estate.
Both varieties are picked and fermented separately in stainless steel tanks at around 16 degrees Celsius. THe two varieties are blended each year in varying proportions to achieve an intriguing combination of the more full-bodied, intense Sauvignon Blanc with a fresher, more austere Verdejo. After blending, the wine remains on its fine lees for a minimum of 3 months for a rounder, fuller mouthfeel.
A fresh, aromatic white wine showing the fruit intensity, varietal precision and freshness of the high-altitude Dominio de Fontana Estate. Pale green-yellow with intense and expressive aromas, combining grassy and gooseberry notes of the Sauvignon Blanc with touches of fennel and white pepper from the Verdejo grape. Concentrated and textured on the palate, with depth, excellent freshness and a persistent, mineral finish. Ideal as an aperitif, with fish and light summer dishes, but also with pasta and white meat.
