This cuvée is made from a single plot of land. These are the oldest vines on the estate. Located on the plain, on the edge of Wintzenheim, the soil is gravelly. This Pinot Gris was conceived and created by Isabelle and Celine Meyer in 2016 as a tribute to their father, who passed away that same year. The label features a photograph taken in Nice by Jean Meyer during one of his poetic walks.
The harvest is 100% manual. The approach remains traditional. The grapes are pressed whole for approximately 6 hours in the pneumatic press. Settling is natural. Fermentation begins spontaneously with the natural yeasts in a small, century-old oak cask. This is followed by ageing on fine or total lees for several months, until bottling, which usually takes place during the summer.
This great dry white wine is defined above all by the finesse of its acidity, imparted by the very old vines in this plot. Its firm, taut structure contrasts with the natural breadth of the grape variety. In cooler vintages, aromas of white flowers, sometimes anise, aromatic herbs, and white fruit are present. The finish is always saline and can evolve towards more earthy, toasty, or even roasted notes in warmer vintages.
This wine pairs wonderfully with dishes that celebrate both land and sea. Grains and creamy risottos are also excellent choices. Foie gras, guinea fowl or rabbit with hints of dried fruit, white meat in sauce, or, for something more original, a Thai salad dressed with toasted sesame, garlic, and soy sauce will truly shine.
