From coralline limestone soils up to 480m above sea level. Opulent sweetness and complex layers of flavour. Warm days and cool nights, allows for a gradual ripening of the grapes which are left on the vine to develop noble rot.

Once the grapes have reached the desired level of ripeness and concentration, they are hand-harvested in small crates. The grapes are then gently pressed and it spends 12 months on lees in stainless steel tank.
