Planted in 2014, the vines here are managed organically and biodynamically with the utmost care. By working tirelessly, they are able to harvest each parcel of their cooler terroir at optimum ripeness. The grapes are harvested by hand from the end of September to mid-October.
The grapes from the highest quality plots are carefully sorted by hand, before being crushed and gently pressed in a membrane press. After settling, fermentation begins spontaneously in the barrels. The wine then spends the winter before undergoing malolactic fermentation in the spring. Barrel again on lees continues until late summer.

“Rather riper and a little oakier than the Goutte d’O bottling. More ‘serious’ than the cheaper bottling and it will doubtless last longer but arguably one does not seek concentration in a Belgian Chardonnay. Long and vibrant. This would be a great wine to serve blind!” Jancis Robinson (16.5+)
