This is a village level wine, of higher quality than estate wine. Plentiful aromas of peach, apricot, pineapple, a hint of lime and orange, complex with a subtle acidity, a light spiciness, and a mineral note, elegant and delicate. The whole remains juicy and balanced at all times. 

Great in combination with shellfish (e.g. clams). Add thyme and saute a lot of vegetables like fennel, celery, carrot, onion and garlic, deglaze with a splash of white wine, and bring the clams to a brief boil. This wine is an absolute winner for fish dishes. Pan-fried salmon with stir-fried vegetables or sole with beurre noisette, lemon and parsley are really just a few delicious examples.
