Goutorbe-Bouillot
Goutorbe-Bouillot is a dynamic Grower Champagne estate based in Damery, in the heart of the Vallée de la Marne. It was founded in the early 20th century through the marriage of Pierrette Bouillot and Jules Goutorbe – two names with deep roots in Champagne viticulture. Today, it’s run by son and father, Bastien and Dominique Papleux, who bring both tradition and fresh energy to the estate. With eight hectares spread across more than 30 parcels, the vineyards are mostly planted to Pinot Meunier, the emblematic grape of the Marne, alongside Chardonnay and Pinot Noir.
The estate is HVE-certified, reflecting a strong commitment to sustainable farming and biodiversity. One of Goutorbe-Bouillot’s defining features is their use of a perpetual reserve system—similar to a solera—which they began in 1980. Each year, a portion of the new wines is blended with this evolving reserve, creating cuvées with remarkable depth and consistency. They also avoid malolactic fermentation, keeping their wines crisp, vibrant, and full of tension.
