Chateau de Cerons

The Château de Cérons is a Manor House (“Chartreuse”) built at the end of the 17th Century, listed on the supplementary list of historic monuments since 2008 is located in the heart of the village of Cérons, in the Graves and Sauternes region, and surrounded by large stone walls. 

Suzanne and Jean Perromat, acquired Château de Cérons in 1958. Coming from a long line of winegrowers and doctors, established in the Graves and Entre-Deux-Mers region for nine generations, they took over the management of this wine estate with passion. In 1980, their son, Xavier Perromat joined the family estate and took charge of the technical management of the vineyard. Passionate about his land and ineradicability, he took over management of the family property in 2012, bringing a new dynamic, both technical and commercial, to this Bordeaux vineyard. 

The Château de Cérons wine estate covers 30 hectares, including 27 hectares of vines, planted on a gravel plateau with a marine limestone subsoil. The vineyard is also influenced by the Ciron River which allows for the development of Botrytis Cinerea for the sweet wines. 

With a planting density of 6500 vines per hectare, Château de Cérons maintains sustainable viticulture practices and respect for its terroir. HVE3 (High Environmental Value) and ISO 14001 certifications have been held since July 2019. Soil balance is managed with cover crops such as wheat, barley, flax, phacelia, and clover to preserve soil microflora and fauna while providing high-quality organic matter. 

Château de Cérons has one of the earliest gravity-fed cellars in Bordeaux, designed for precision winemaking. Built in 1960, the gravity-fed cellar has been fully restored and equipped with concrete tanks for red wine fermentation and small stainless steel tanks for the white wines. The ageing cellar has been relocated to the Château’s old barn, integrating tradition with modernity.
