Zillinger
Herbert Zillinger is a trailblazing biodynamic producer in Weinviertel and a member of respekt-BIODYN. His main focus is Gruner Veltliner, which is vinified in various ways from classic to radical, taking the variety to its limits. In doing so, they create unique wines.
Zillinger sees wine as a nature-loving craft, which they practise full of passion and ignore fashion. The wines are completely natural with nothing added or withdrawn during the entire vinification process. Only a minimum of SO2 is added, if necessary, for stabilisation before bottling. They create unique wines, with a profile and structure, so you can recognise them and the soil and grapes they come from.
The winery has been a proud member of the biodynamic winemaking group respect-BIODYN since 2016, with 2017 being their first certified vintage. They love the learning exchange with the other members, people who share the same philosophy of life and making wine. A total of 16 hectares of biodynamically cultivated vineyard in the Vienna Basin, in which the loess soil is central.
We were curious when Jancis Robinson proclaimed Zillinger “One of the most exciting wine producers anywhere!” We could not agree more.
