The Ebenthal vineyards have a cooler climate and more clay in the soils; Ollersdorf, to the south, has more limestone and sandstone – and little rain. Nowhere is the mix of Ebenthal and Ollerdorf vineyards and terroirs more on display than that of the Horizont bottling. A wine of two terroirs.Â
Whole cluster soft pressing into large stainless steel tanks where the spontaneous fermentation starts. There is no temperature control as long as the must doesn’t exceed 27°C. Elevage of nine months on the lees, 70% in stainless steel and 30% in large 1000 l Austrian oak. Annual production of 6000 bottles.Â
