Learn More About This Wine

The vast majority of land in Mâcon is dominated by clay (alluvial deposit) and a good quantity of limestone. A blend of Chardonnay from several vineyards selected because of the high level of finesse they express. The grapes are from old vines from several vineyards of the Mâconnais: Hurigny and Lugny in the North, Fuissé in the South. This blend ensures a nice balance between roundness and a deep refreshing minerality. The solid consists of hard white limestone, mixed with scree and red clay. 

The harvest is made to the optimum maturity of the grapes, manually harvested, sorting the grapes in the vineyard with care. Long progressive and careful pressing with a pneumatic press to extract the best juices. The alcoholic fermentation and malolactic conversion (100% completed) are spontaneous into french oak barrels: 8 to 20 years old for 70% and 30% in more recent barrels, no new oak. Ageing on the lees for 11 months with no stirring to preserve the pure structure of the wine and the expression of the terroir.
