The Reserve blocks are fully South-facing (north facing in a European context) and offer the very best of a cool site in an otherwise warm viticultural environment. Other factors such as vertical shoot positioning, the weathered granite mid-slopes and the cool morning sunlight and moderating sea breezes off False Bay also play a significant role in the quality from these blocks. Yields are typically low to moderate and grapes are very concentrated with good levels of natural acidity and freshness.
Grapes were hand-picked and whole bunch pressed. Juice was transferred to French oak barrels with minimal settling. Fermentation occurred naturally in French oak barrels of which 30% was new. About 70% of the volume completed malolactic fermentation during a 10-month ageing on gross lees. The wine was bottled with minimal stabilisation and clarified without filtration.
