Learn More About This Wine

This is an intimate cuvée, as they only have three small parcels located within this Grand Cru vineyard. This terroir rests on a granite subsoil, a rock composed of quartz, feldspar, and mica, resulting in a sandy and coarse soil. This type of subsoil has a warming effect on the roots, thus promoting the proper ripening of the grapes. It also creates a microclimate thanks to the heat stored on the surface by its small stones. 

The harvest is 100% manual. The approach remains traditional. Whole grapes are pressed for approximately 7 hours in pneumatic press. Settling is natural, fermentation begins spontaneously with the natural yeasts in a century-old oak casks. This is followed by ageing on fine lees for several months, until bottling, which usually takes place in July. Before bottling, the wine is filtered. Sulfur levels may be adjusted at this time, if necessary. 

This vertical, vibrant, and dry Riesling is defined by a saline and mineral structure carried by an acidity that pierces the substance and serves as its backbone. The open and refined nose evolves with citrus, mandarin, and orchard blossoms, with a mineral touch like graphite that underscores the terroir’s origin. In warmer years, fruit flesh, spruce, and hawthorn mingle with flint. The palate delivers a lively and direct attack. The texture is taut, pure, and precise. The powdery and fresh acidity reveals a strong salinity. Flowers, citrus, salt, and rock are in perfect harmony on this beautiful terroir. 

This wine is a perfect partner for fish and seafood. It pairs beautifully with refined Japanese cuisine, as well as dishes that emphasize salt and iodine.
