Planted in 2014, the vines here are managed organically and biodynamically with the utmost care. By working tirelessly, they are able to harvest each parcel in this cooler terroir at optimum ripeness. The grapes are harvested by hand from the end of September to mid-October.
The grapes are sorted by hand before being crushed and gently pressed in a membrane press. After settling, fermentation starts spontaneously. The wine then spends the winter before undergoing malolactic fermentation in the spring. The choice of container for fermentation and ageing is made on a case by case basis for each of the parcels in order to best preserve their character (stainless steel vat, amphora, concrete egg, and barrel).
